If you think kids and pregnant women are the only ones that love snicker doodles aka "snicky doodies", then you are wrong. Try sending some peanut butter snicker doodles to our men and women in the war and you will multiples messages and requests for more. The request for cookies I get from my husband from his friends usually makes me laugh. I can only imagine how a home made cookie in the middle of nowhere can make any place feel a little more like home. Please try these cookies and think of how many people you can make smile with a little love and some cookies. Enjoy!
yields enough for 3 cookie sheet
1 C. Shortening
1½ C Sugar
2¾ C flour
1 teaspoon Baking Soda
2 teaspoon cream of tartar (very important ingredient)
½ teaspoon salt
2 Tbsp. creamy peanut butter
2 Tbsp sugar
2 teaspoon ground cinnamon

Set oven to 375 degrees & grease cookie sheets.
In bowl cream together shortening and sugar.
Add eggs one at a time, mixing after each.
Mix flour, baking soda, cream of tartar and salt then stir into creamed mixture until well blended.
After the mixture is blended, swirl peanut butter through out the mixture.
In a small shallow bowl, stir together 2 Tbsp sugar with the cinnamon.
Roll cookie dough into walnut sized balls and roll in sugar mixture.
Place 2 in. apart on greased cookie sheets.
Bake for 8 to 10 min. Should be slightly golden at edges.
Let cool on the cookie sheet for 1 min. and cool on wire racks. YUMMY
