Maple Leaf Cookies

A maple flavored butter cookie

1 cup (2 sticks or 226 grams) unsalted butter, at room temperature ½ cup (200 grams) granulated sugar ½ cup brown sugar ½ cup (118 ml) maple syrup 2-3 drops of maple flavoring 1 large egg yolk 3 cups (375 grams) all-purpose flour ½ teaspoon salt Topping: ¼ cup maple syrup ⅓ cup sanding sugar (or any coarse sugar)

Sift flour and salt into a medium bowl. Beat butter and granulated and brown sugars with a mixer on medium-high speed until pale and creamy, about 3 minutes. Reduce speed to medium-low, and add yolk, then ½ cup maple syrup, beating well after each addition. Add flour mixture, and stir by hand until just incorporated. Wrap dough in plastic and refrigerate for at least 2 hours (or up to 2 days). Preheat oven to 325 degrees. Cover baking sheet with parchment paper. Roll out half of dough to ⅛-inch thickness. Using maple leaf cookie cutter, cut out cookies and place on parchment covered cookie sheet. Bake cookies until edges begin to turn golden, 14 to 16 minutes. Before removing from cookie sheet, brush cookies with maple syrup and sprinkle with sanding sugar. Remove to rack to cool. Repeat with remaining dough, maple syrup, and sugar.
