Italian Merange

A melt in your mouth light and airy, sweet treat with a most unique crust. Almost as beautiful to look at as it is to eat. Can be made a week ahead.




11 egg whites 40 crackers 3 Cups sugar 1 Cup heavy whipping cream 1 Cup chopped pecans

Whip 5 egg whites. As begins forming peak, add 1 Cup sugar. Beat until holds peak. Crush 40 crackers. Add 1 Cup chopped pecans. Gently fold into egg whites. Bake in 11 X 14 pan at 350 degrees until slightly brown Cool completely. Then top with: 6 egg whites and 1 cup sugar whipped until stiff. Bake 350 until slightly brown. Cool completely. Top with 1 Cup whipping cream and 1 Cup sugar whipped. Keep refrigerated.
