Italian Easter Bones of the Dead

An Italian Easter Favorite my Grandma used to make.

1 pound confectioners sugar 3 eggs separated (large or extra large) 3 teaspoon baking powder ¾ pounds of flour (3 cups) ½ teaspoon anise or vanilla or lemon flavoring

Mix dry ingredients and sift three times. Separate eggs and beat whites stiff. Beat egg yolks with flavoring you chose and add flour mixture. Fold in stiffly beaten whites. Work dough well. Roll in long strips 1 inch thick. Cut 2 inches long diagonally. Place on cookie sheet and let dry overnight uncovered. Bake at 350 degrees for 8 to 10 minutes. For flavoring I use Clove Oil (that's what was in the the store bought ones). Make sure there is enough room between each cookie for spreading when cooking. (I made the mistake of putting them too close and had to cut them to separate them. Figure like 12 on cookie sheet.
