Ginger fruit cookies

ginger flavored cookie slices filled with dried and glace fruits.




3 cups flour 1 cup sugar or Splenda 2 heaped teaspoon ginger 1 heaped teaspoon cinnamon 2 eggs [beaten and save 2 tablespoons for the topping] 2 Tablespoons oil 2 teaspoon orange rind ¼ lb melted butter with 2 Tablespoons syrup melted and cooled. ½ teaspoon baking soda dissolved in a little hot water. Filling: Apricot jam, coconut and mixed dried fruit .If preferred add cut up glace fruits and chopped pecan nuts as well, but reduce the dried fruit. Topping: Cinnamon and sugar mixed together.

Add everything together except the filling and knead till blended. Cut dough into 4. Roll out each one in an oblong shape 5-6 inches wide and 9 inches long. Spread thin layer of jam, sprinkle coconut and dried fruits. Take a spatula and lift sides to center closing dough at each end and down the middle. Lift by hand onto a baking sheet .Glaze with remaining beaten egg and sprinkle with cinnamon/sugar mixture. Bake at 350* for 35 minutes. While hot, slice on the diagonal 1 inch thick. Cool. 24 -30 cookie slices. Keeps well in a cookie tin.
