Geneva's Pecan Pies

There were so many times we all enjoyed these pecan pies but never watched her to learn how to make them. When she was 91 she was diagnosed with leukemia and given 6 months or less to live so I left Oklahoma and stayed with her in her house from Sept to her death in November. While with her I asked her to show me how to cook several of her recipes including these pecan pies. And I cooked them for her each day and SHE ATE THEM AND PROCLAIMED THEY WERE AS GOOD AS HERS!!! What a wonderful time of love and memories that special time was for me!




¾ cup sugar ½ cup dark karo syrup 2 tablespoon butter...melted two eggs beaten with fork ½ teaspoon vanilla ½ teaspoon lemon flavoring 1 full cup of chopped pecans

combine sugar and Karo and spoon not whip or beat Add melted butter and stir Add fork beaten eggs Add vanilla flavoring Add lemon flavoring Add pecans Spoon into 12 Dutch Boy tart shells Bake at 325 for 35 minutes
