Crumb Cake

Great cake to serve with tea or coffee. Can be a nice coffee cake for an afternoon tea as well as a hardy cake for men.




1½ cups brown sugar 2 cups flour 2 teaspoons baking powder 1 cup margarine or butter 2 eggs (well beaten) ¾ cup milk ½ teaspoon vanilla

In a large mixing bowl, combine brown sugar, baking powder and butter together until crumbly; take ¾ cup of this mixture and set aside.
In a separate bowl beat eggs, add milk, vanilla and stir. Add the liquid mixture to the dry ingredients stir just enough to blend. Do not over-mix. Batter will be a bit lumpy when put into pan. Put in a lightly greased 9 X 13 pan and cover with ¾ cup crumb mixture. Bake at 350 degrees oven for about approximately 40 minutes or until a toothpick inserted in center comes our clean. This cake can be frozen for up to three months. It is delicious served warm at a morning or afternoon coffee or tea gathering.
