Beth's Cheesecake

This cheesecake is simple and delicious. I've had guests tell me it's the best cheesecake they've ever eaten.




Crust: 2 cups graham cracker crumbs ½ Cup melted butter 3 tablespoons sugar Filling: 5- 8oz. cream cheese bars 1&½ cups sugar 6 eggs 1 cup sour cream pinch of salt 1 teaspoon vanilla

Combine ingredients for crust. Line 10 inch springform pan. In a large bowl combine filling ingredients. Mix until all the ingredients are smooth and creamy. I usually mix a little at a time and then combine it all. Pour into lined springform pan. Bake at 500 degrees for 12 minutes and then turn oven down to 250 degrees. Bake for another 75 minutes. Turn off oven and open door. Let sit for ½ hour and then remove from oven. Let cook completely and refrigerate.
