Chocolate Heaven

Rich - Moist Dark Chocolate Cake

This cake is Chocolate Heaven! The cake and the frosting are both rich dark chocolate and very moist. We make this with or without chopped nuts, either way is great!



Chocolate Cake:
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
2-1/4 cups granulated sugar
1-1/4 cups dark cocoa powder
1/4 teaspoon ground cinnamon
2 cups all-purpose flour
1/2 cup vegetable oil
3 eggs
3/4 cup milk
2 Tablespoons light corn syrup
2 Tablespoons vanilla
1 cup boiling water

Chocolate Frosting:
1 stick butter (1/2 cup) at room temperature
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups powdered sugar
3/4 cup Dark cocoa powder
1 teaspoon rum extract
1 teaspoon vanilla extract
1/3 cup milk

Optional: 3/4 cup chopped walnuts (or pecans)


Chocolate Cake: Preheat oven to 350 degrees F. Grease and flour 9x13 inch cake pan (or two 9 inch rounds). In large bowl: mix together all dry ingredients. Add all wet ingredients (EXCEPT the boiling water). Mixing on Medium Speed for 3 ninutes. Now using a spatula, stir in the boiling water to create a thin batter. Pour into pan(s). Bake 30 to 40 minutes until done. Cool completely.

Rich Chocolate Frosting (about 2 cups): Cream the butter, cinnamon and salt together, alternate adding the remaining ingredients. You may add a bit more milk if needed to make frosting your desired consistancy. Frost your cake(s).

Optional: sprinkle the top and or sides with chopped walnuts (or pecans).
