Banana Bread Budding

Delicious Banana Bread Pudding

For low-fat version, use low-fat products and substitute whipped topping with remaining yogurt and use whole-wheat bread in lieu of white.



10 slices bread
2 cups of milk
2 bananas, mashed
1 cup vanilla Greek yogurt
1 egg
3 egg whites
3/4 cup brown sugar
1 tsp ground cinnamon
1 tsp vanilla extract
1/3 cup chopped walnuts
1/2 cup chocolate chips
Whipped Topping (optional)


Spray a 9 x 13-inch baking dish with olive oil. Break bread into 1 inch pieces and place in prepared dish. In a large bowl, whisk together milk, bananas, yogurt, eggs, brown sugar, vanilla, and cinnamon. Pour mixture over bread. Using your hands, mix bread with milk mixture so that all the pieces are coated. Let stand for 15 minutes. Preheat your oven to 350F. Just before you put your dish into the oven, mix in chocolate chips and walnuts. Bake for 50 - 55 minutes, until bread pudding is puffed up and golden brown. Remove from oven and let stand 10 minutes before serving into bowls.
