Mock Cheesecake DessertUser Submitted Recipe
1 and 1/2 cups graham wafers
1/3 cup melted butter
1 tablespoon sugar
3 ounce package of lemon jello
3 tablespoons of lemon juice
2 cups whipping cream
1 teaspoon vanilla
1/2 cup sugar
Mix the graham crumbs, melted butter, and tablespoon of sugar together to make the crumb base mixture. Put this into a buttered 8 by 10 glass pan (save a few crumbs to sprinkle on top later). Bake at 350 for about 10-12 minutes. Let cool.
Dissolve jello in 1 cup boiling water. Add lemon juice and chill in freezer or fridge until it starts setting (runny but thickening).
Whip the cream with the vanilla and 1/2 cup of sugar.
Mix the whipped cream with the lemon jello mixture. Pour over the cooled base and sprinkle crumbs on top of dessert.
Refrigerate and enjoy. Serve as needed.
