Persimmon Cookies


1 c. shortening/margarine
2 t. vanilla
2 c. sugar
2 t. soda
2 eggs, beaten
4 c. flour
2 c. persimmon pulp
1 t. cloves
1 t. salt
1 t. nutmeg
1 c. raisins
1 t. ginger
1 c. chopped nuts
2 T. lemon juice


Cream shortening, sugar and eggs. Beat well. Add persimmon pulp and flavoring. Sift together dry ingredients; beat well into wet mixture. Add raisins and nuts. Bake on a greased cookie sheet at 350 degrees for 15 minutes.
