Holiday Salad

Great to serve as a dessert or a salad at any time"


1 lg crushed pineapple
1 c sugar or Splenda
Juice of one lemon
2 pkgs of unflavored gelatin
2/3 c chopped pecans
2/3 c shredded cheddar cheese
1 lg Cool Whip


Heat pineapple with juice, sugar, lemon juice to very hot, do not boil. Add gelatin, mixed with a little cold water, to hot mixture and stir until gelatin is dissolved. Let cool. Add cheese, nuts, and Cool Whip. Put into a mold or bowl and chill.
