Mascarpone ParfaitUser Submitted Recipe
16 Oz. Mascarpone Cheese
2 Egg Yolk
1/2 Cup Super Fine Sugar (Not Confectioner's Sugar!)
1/2 Lb Each of Fresh Strawberries, Blueberries, and Black or red Raspberries.
1/3 Cup Sugar
Clean all the berries and allow to air dry for 10 minutes. Add 3/4 cup of regular sugar and stir mixture. Allow to macerate for 1/2hr. Combine Mascarpone Cheese and egg yolks, mixing well. Slowly add Super Fine sugar until firm peaks appear. Allow to cool in refrigerator for at least 1/2 hr. Using wide mouthed wine glasses or pilsner glasses alternate levels of Cheese and fruit. (Using a piping kit or freezer bag with the corner cut works best) Finish top layer with cheese mix and garnish with a sprig of mint and a strawberry. Allow to chill for 15 minutes prior to serving.
