Sue's Sausage Potatoes

A wonderful compliment to your breakfast. Pair with eggs prepared your favorite way.




1 lb hot pork sausage 1 Stalk diced celery 1 Large diced russet potato 2 Tbsp butter ¼ Cup chopped yellow onion 4 cloves minced garlic ½ Cup chopped fresh fennel stock and leaves ¼ Cup chopped fennel bulb Pinch fresh ground anise ¼ Cup Water

In large fry pan on medium heat, sauté pork sausage (drain off fat if any). Add butter, potato, onion, garlic, fennel stalk and bulb, and anise seed. Saute' 5 minutes. Add water, cover, and simmer 10 minutes or until potato is cooked through. Remove lid and simmer until most of the water has evaporated. Salt to taste. Enjoy!
