This is one of the best breakfasts I make. My family gets so excited when I make this. Who cannot love the classic breakfast of french toast, and then add some sophistication with making them stuffed. I have never seen this recipe in a magazine, I came up with it myself because I love cream cheese and preserves together. Enjoy!
6 pieces of Italian Style sandwich bread
1 teaspoon vanilla
¼ cup of half and half cream
½ teaspoon cinnamon
4 tablespoons of apricot preserves
4 tablespoons of cream cheese
melted butter for pan
butter to spread over top of french toast
powdered sugar to dust top of french toast

Turn on electric griddle at around 350 degrees....
In a bowl, whisk eggs, half and half, cinnamon and the vanilla.
Once the pan is hot enough, add some butter, just to coat.
Dip the bread slices in the egg mixture, coating both sides. Add to griddle and cook on both sides until golden.
Place one slice on a regular size plate. Spread one tablespoon of cream cheese. Take another slice of the toast and spread with the preserves. Make a french toast sandwich. Butter the top slice and then sift powdered sugar on top to make it pretty.
Repeat with others so that you get 4 stuffed french toasts.
