My goal is to start my family's day off with a nutritious and hearty breakfast that will last through their busy activities. Every chance I get, I try to sneak some greens of some sort in to get those extra nutrients to fuel their active bodies and lifestyle. This Power Greens Egg Casserole is EASY-to-make, delicious, hearty, and you can make it the night before! Sub out the whole grain bread, and it's a gluten-free breakfast. Either way, this meal hits the spot and makes for great left-overs too! Enjoy!
Ingredients
8 eggs
½ cup low fat cottage cheese
½ cup shredded mozzarella cheese
2 cups cubed whole grain bread
½tbs basil
½tbs oregano
1 teaspoon garlic powder
½ teaspoon sea salt
* Optional: 1 cup chopped spinach
* coconut spray for 8x8 glass Pyrex dish

Instructions
Preheat oven to 375 degrees. Place cubed whole grain bread in bottom of dish. Next, hand chop spinach. Then, in a bowl, mix spinach and remaining ingredients by mixing well by hand. Pour mixture over bread.
Bake uncovered for 35-45 minutes. * Edges are brownish, and MIDDLE is set and firm. You must check middle before taking out of oven. My casserole took closer to 40 minutes.
