This is good served for breakfast or any other light meal of the day.
4 matzos, unsalted
3 eggs, slightly beaten
2 tablespoon milk
1 apple, finely chopped
¼ cup craisins
½ cup walnuts, chopped
½ teaspoon cinnamon
sugar for sprinkling
2 tablespoon butter or margarine

Break up matzos & cover with water. Let stand several minutes, then drain. Combine rest of ingredients (except butter). Set aside. Melt 1 tablespoon butter in skillet & add drained matzos. Let brown til crispy on bottom. Put plate on top of skillet, & flip
matzos, putting 1 tablespoon on bottom of pan. Add egg mixture, & push matzos away from sides of pan to allow liquid to seep into pan & matzos. Cook til set; turn over & let brown. Remove from skillet & sprinkle sugar on top, cut into wedges & enjoy!
