Spinach & Bacon Pancakes

One dish meal. Pancakes contain spinach and bacon."


1 cup Aunt Jemima Pancake Flour (Original)
1 egg
1 tbsp olive oil (light tasting)
3/4 cup skim milk
1 lb spinach, chopped in Cuisinart (or 1 10 oz. pkg. chopped spinach, thawed and drained)
6 slices bacon, cooked and chopped
1 tsp. vanilla
Butter flavored spray


Beat egg. Add all ingredients. Mix gently. Meanwhile, heat griddle until drops of water dance. Spray griddle with butter flavored spray. Drop pancake batter onto griddle with 1/4 cup measure. Turn when bubbles appear. Serve golden brown with lightly warmed maple syrup. Enjoy!
