Sweet crunchy biscotti to dip into your favorite coffee or tea.
½ cup granulated sugar
1 teaspoon vanilla extract
½ teaspoon almond extract
1 teaspoon baking powder
¼ teaspoon salt
1⅔ cup all-purpose flour
1 cup raw whole almonds
½ cup dried pitted cherries (chopped)

Blanch almonds by dropping them in boiling water for a few minutes. Squeeze to remove jackets. Once removed toast in broiler for 5-8 minutes or golden brown. Chop coarsely then set aside.
Preheat oven to 350 degrees.
Beat sugar and eggs until blended well (5 min.)
Beat in vanilla and almond extracts
In a separate bowl sift dry ingredients then
Add to the sugar and egg mixture.
Fold in chopped almonds.
Batter will be sticky but hold together well, form a log onto a baking sheet with parchment paper.
Bake for 25 minutes at 350
Remove from oven and cool slightly.
Reduce over temp to 325
Slice crossways into ¾ inch cuts and place back on baking sheet with cut sides down.
Return to oven baking 10 minutes on each side and golden brown.
Biscotti can be dipped in melted chocolate chips if desired.
Remove and cool then store in an airtight container.
Makes about 14 biscotti, enjoy!!
