This dip is addictive! We often double the recipe for parties.
2 (14.5oz) cans diced tomatoes with Basil, Garlic & Oregano
2 (14.5oz) cans diced tomatoes with Zesty Mild Green Chilies
1 (4.25oz) can chopped ripe olives
2 bunches scallions, chopped (white & green parts)
6 Tbsp olive oil
6 Tbsp red wine vinegar
½ teaspoon salt or more to taste
Tabasco sauce to taste

Lightly drain tomatoes...leaving some juice. Combine tomatoes, chopped scallions & chopped ripe olives in bowl.
In another bowl, combine olive oil, red wine vinegar, salt and Tabasco. Whisk to combine. Pour over tomato mixture and stir to combine. Refrigerate for 2-3 hours or overnight for best flavor. Serve with sturdy chips or crackers of choice.
