Ingredients
2 small cans sliced black olives, drained
1 can of shoe peg corn (10-11oz), drained
1-2 avocados, diced
2-3 small tomatoes, diced finely (or use a can of petite diced tomatoes - I prefer fresh)
1 can black eyed peas
3-4 sprigs fresh dill, finely chopped
3-4 sprigs fresh cilantro, chopped
6-8 leaves fresh basil, finely chopped
1 packet of Italian seasoning

Mix it all together and enjoy! For the herbs, I find that dill really makes this recipe perfect but feel free to mix it up and experiment. We scooped it up with these delicious multigrain and flax chips we love from Costco.
