This is a refreshingly light summer salad. Sweet berries sprinkled over crisp little gem lettuce create a delicious starter for any barbecue in the sun.
2 TB rice wine vinegar
2 TB lemon juice
1 TB lemon zest
1 TB honey
½ C extra virgin olive oil
2 heads little gem lettuce
1½ cup mixed berries
½ C goat cheese

1. Combine the vinegar, lemon juice and zest, and honey in a blender. Blend until thoroughly mixed.
2. With the blender running, very slowly drizzle the oil into the vinegar mix to emulsify. Adjust seasoning with salt and pepper.
3. Arrange the lettuce on a serving plate. Top with the berries and goat cheese.
4. Pour the lemon vinaigrette over the salad and enjoy.
