This low fat version of the classic spinach artichoke dip is just as tasty and half the calories, at least. A little cracked red pepper adds a little kick to the recipe.
2 cups low fat mozzarella cheese
½ cup low fat sour cream
¼ cup grated fresh Parmesan cheese
¼ teaspoon black pepper
⅛ teaspoon crushed red pepper
3 garlic cloves crushed
1(14 oz. can) artichoke hearts, drained and chopped
1 (8 oz.) block low fat cream cheese
1 (8 oz) block fat free cream cheese
½ (10 oz.) pkg. frozen chopped spinach, thaw, drain, squeezed dry

Combine 1½ cups of mozzarella, sour cream, 3 tablespoon. Parmesan and next 6 ingredients in food processor until well blended. Spoon mixture into a baking dish approx. 1½ qt size. Sprinkle with ½ cup mozzarella, and remaining Parmesan. Bake at 350F for 30 minutes or until bubbly and golden brown. Serve with pita chips or tortilla chips.
