You'll love these zesty bites! Rounds of sliced French bread are topped with a mixture of spicy sausage, sweet peppers, mozzarella and parmesan cheese.
2 lbs hot italian sausage meat
1 large onion, diced
2 cloves garlic, diced
1 green bell pepper, diced
1 yellow bell pepper, diced
20 grape tomatoes, diced
1 stick of salted butter
2 tablespoon olive oil
¾ cup mozzarella cheese, plus ¼ cup, shredded
¾ cup of grated parmesan cheese plus ¼ cup
½ cup of Italian flavored bread crumbs
¾ cup of chicken broth
½ teaspoon paprika
1 loaf Italian baguette or French Bread, 10 – 12 oz, cut into 40 slices

Preheat oven to 350.
Cook sausage on medium heat until brown.
Transfer sausage to a bowl.
In skillet heat oil over medium heat and cook onions, garlic, peppers and tomatoes until soft.
Add butter and melt, add sausage.
Add broth, cook on medium high heat until bubbly, remove from heat
Add bread crumbs, ¾ cup mozzarella and ¾ cup parmesan.
Pour into two 9” pie pans.
Sprinkle ¼ cup mozzarella, ¼ cup parmesan and paprika on top.
Bake at 350 for 30 minutes
Spoon mixture over bread slices.
