Savory Stuffed Mushrooms

Great as an appetizer or a side with a roast!




3 boxes of white button mushrooms 1 large vidalia onion 1 stick of butter unseasoned breadcrumbs (about 2 cups) 1 can of cream of mushroom soup thyme (2 teaspoons) salt pepper

1) separate stems from mushroom caps 2) arrange caps on a cookie sheet and set aside 3) finely chop mushroom caps and place in medium sauce pan 4) mince the onion and add to the same sauce pan 5) slice up the butter into tabs and add to the sauce pan 6) cook mushroom stems, onion, and butter in covered sauce pan on medium heat until onions are cooked through (about 15-20 minutes) 7)slowly add breadcrumbs to the cooked mushrooms and onions until you have a moist crumbly stuffing texture. 8) add the 2 teaspoons of thyme 9) salt and pepper to taste 10) fill mushroom caps with the stuffing mixture 11) place a dollop of cream of mushroom soup on the top of each stuffed mushroom 12) bake at 325° for 25 minutes 13) serve hot
