Pesto Grilled Veggies

Making great pesto with the food processor, marinate your favorite vegetables then grill them to your liking.




2 cups of basil ½ cup of pistachio nuts 1 teaspoon of chili oil 1 tablespoon of soy sauce 2 tablespoon of mirin ½ cup of olive oil 1 cup of broccoli cuts 1 cup of cauliflower cuts 1 cup of cherry tomatoes 1 bell pepper 2 red onions

Put the basil, pistachios, olive oil, soy sauce, and mirin in the food processor, let the Cuisinart do all the work. After a good mix, take a sample taste and add more olive oil, soy sauce, or miring to your liking. Then just let the sauce sit while you dice up the vegetables. Cut the bell peppers into quarter size pieces, the onions can be cut into eights to give you the same size as the peppers. Drop all the vegetables and half the sauce into a Ziploc bag and mix well. Let the vegetables marinate for thirty minutes, while you set up the outdoor grill. Assemble your vegetables onto skewers and grill to your liking. At this point you can use the leftover sauce to marinate the vegetables while your grill or for dip later.
