Layered Mexican Dip

1 can of refried beans (fat free or not) 1 can of rotel sauce (spicy or mild) 1 block of cream cheese(low fat or not) 1 block of pepper jack cheese 1 medium red onion ¼ cup sliced black olives(optional)

In a 13x9 pan spread beans evenly in bottom. Open and drain rotel well, until as much liquid as you can get is out. Spread rotel evenly over beans. Soften cream cheese in microwave until smooth. (30 or 40 seconds depending on microwave) Spread cream cheese evenly over rotel. With food processor or cheese grater shred pepper jack and sprinkle over cream cheese. Dice red onion in processor or with knife and spread over pepper jack. Preheat oven to 350°. Bake for 30 minutes or until cheese is melted and bubbling. Sprinkle with olives when done. Allow to cool for 15 minutes and serve with your favorite corn chips.
