A simple summer salsa with unexpected ingredients. I had this once, about 15 years ago while searching for colleges for my brother. I never forgot how amazing it was, so simple and yet so different.
4 not-too-ripe kiwi (green or yellow)
1 jalapeno pepper
salt to taste
sugar to taste (not more than 1 tsp)

Peel kiwi and shallot and cut into quarters, add to Cuisinart food processor. Remove stem from jalapeno, cut in half and remove seeds if you wish. Add jalapeno to food processor. Halve limes and squeeze the juice of 1 lime into processor. Cover processor and pulse until ingredients are chopped and mixed, adding more lime if needed. Taste and adjust seasonings adding sugar and/or salt as necessary. Serve cold with Terra Chips, the root vegetable mix is best.
