Ingredients
6 tablespoon extra virgin olive oil
2 tablespoon vodka
1 egg
1¼ cups flour, sifted
1 cup water
¼ teaspoon. kosher salt
⅛ teaspoon baking powder
1 cup sliced leeks (white part only)
10 oz. feta cheese, crumbled
3 tablespoon butter

Instructions
Heat oven to 500°. Put an 18" x 13" x 1" rimmed baking sheet or, 18" rimmed pizza pan into oven for 10 minutes
Saute leeks in 1 TB of butter til soft - set aside to cool
Meanwhile, whisk together 2 TB oil, vodka, egg and 1 cup of water in a bowl.
In separate bowl, whisk flour, salt and baking powder. Pour wet mixture over dry mixture and whisk until smooth.
Brush remaining oil over bottom of hot pan and add batter, working quickly, spread batter with rubber spatula to coat the bottom evenly.
Distribute cheese and leeks evenly over batter and dot with remaining 2 TB butter.
Bake, rotating baking sheet halfway through, until golden brown and crunchy, about 20 minutes.
Let cool slightly before slicing and serving.
