32 oz. frozen corn niblets
1 medium bell pepper, chopped
6 Roma tomatoes, chopped, drained
1 cup green onions, chopped
2 cup sharp cheddar cheese, shredded
1 (7 oz.) green chilies, chopped
1 cup mayonnaise
1 (8 oz.) sour cream
1 teaspoon ground cumin
1 teaspoon black pepper
1 teaspoon or more of sugar (to taste)
1 teaspoon salt (to taste)

Put corn and 4 Tbsp water in microwave proof container. Cook 4 minutes on high, drain. Set aside to cool.
Add all other ingredients except tomatoes and bell pepper. Chill covered at least 3 hrs. or overnight. Just before serving, add chopped, drained tomatoes and bell pepper. Serve with corn chips or scoops.
