Bacon-Wrapped Orange BBQ Scallops

A yummy appetizer that is a hit year round.




8 Slices Bacon 8 Large Sea Scallops ½ cup Barbecue Sauce (I prefer Sweet Baby Ray's) 1 Large Orange (Squeezed) ¼ teaspoon Fresh Ground Black Pepper ¼ teaspoon Kosher Salt

Heat grill to medium heat. Pat scallops dry on both side and sprinkle with salt and pepper. Combine barbecue sauce and juice from orange. Place bacon on towel-covered microwave plate and microwave on High for 2 minutes or until bacon just starts to cook but is not crispy. Cool slightly. Wrap 1 slice bacon around each scallop. Thread two scallops onto each of 4 skewers. Grill 3 to 4 minutes on each side or until scallops are done and bacon is crisp, turning frequently and brushing with orange barbecue sauce.
