Sesame Sauce

This familiar restaurant-style hibachi sauce pairs very well with red meats.


Makes 3 cups


¾           cup toasted sesame seeds

¼           cup plus 2 tablespoons sesame oil

4             garlic cloves, peeled

1-inch   piece fresh ginger, peeled

¼           cup plus 2 tablespoons reduced sodium soy sauce

¼           cup plus 2 tablespoons red wine vinegar

2             tablespoons dry sherry

1             tablespoon granulated sugar

¼           teaspoon red pepper flakes

1             cup chicken broth, low sodium

Put sesame seeds and oil into the blender jar. Secure lid.

Select Speed 5 and press Start. Blend until a thick paste forms, about 10 seconds. Scrape down sides if necessary.

Add the remaining ingredients, in the order listed, to the blender jar with the sesame paste. Secure lid. Select Speed 10 and press Start.  Blend until smooth, about 10 seconds.

Taste and adjust seasoning as desired. Serve at room temperature.
