Guasacaca

A zesty version of guacamole originating from Venezuela.

Yields

Ingredients

2      garlic cloves, peeled
3      tomatillos (about 7 to 8 ounces),
        quartered
1      small jalapeño, halved and seeded
1      small onion (about 2 to 3 ounces),
        cut into 2-inch pieces
1½   teaspoons kosher salt, divided
1      tablespoon olive oil
½     cup fresh cilantro leaves
¼     cup fresh parsley leaves
1     ripe avocado, halved and pitted
2     tablespoons fresh lime juice
2     tablespoons white vinegar
½    cup water

Instructions

1. Preheat oven to 400°F.
2. Toss the garlic, tomatillos, jalapeño, and onion with the oil and ½ teaspoon of salt. Arrange evenly on a baking sheet and roast in preheated oven until vegetables have softened and developed a browned exterior, about 30 minutes. Once roasted, allow vegetables to cool to room temperature.
3. Once cool, insert the universal blade into the work bowl of the Cuisinart® 7-Cup or 9 Cup Food Processor and add the roasted vegetables with the cilantro and parsley. Pulse until mixture is almost smooth.
4. Scrape the sides of the bowl and add the avocado, lime juice, vinegar, and remaining salt, then pulse 10 to 12 times, until the mixture is mostly smooth.
5. With the unit running, pour the water through the feed tube.
6. Adjust seasoning according to preference. Serve immediately.
