This basic vinaigrette is perfect for a crisp green salad.
Makes about 3/4 cup
1 small shallot, peeled
1 tablespoon Dijon-style mustard
¼ cup wine vinegar
½ teaspoon kosher salt
¼ teaspoon freshly ground pepper
⅓ cup extra virgin olive oil
⅓ cup vegetable oil

Insert the metal chopping blade into your Cuisinart Food Processor. With the machine running, drop the shallot through the feed tube to finely chop. Scrape the work bowl and add the mustard, vinegar, salt and pepper. Process to combine, about 10 seconds. With the machine running add both oils in a slow, steady stream, process until emulsified.
Refrigerate any unused portions. Bring to room temperature before using.
Note: This basic vinaigrette may be modified by changing the flavor of the vinegar, mustard or oil. Try using fresh lemon juice and a little honey for a honey-mustard vinaigrette. Add fresh herbs, sun-dried tomatoes, or pesto for other flavor changes.
