Cucumber Yogurt Sauce

This thin sauce, served cold, is a great accompaniment for grilled meats.


Makes 1½ cups


½           cup plain, low-fat yogurt

1             teaspoon kosher salt

½           cup packed fresh mint leaves

½           teaspoon freshly ground black pepper

2             medium cucumbers, peeled, seeded and
               cut into 1-inch pieces

Put all ingredients, in the order listed, into the blender jar. Secure lid.

Select Speed 10 and press Start. Blend until smooth, about 15 to 20 seconds.

Taste and adjust seasoning as desired. Serve immediately. If not using right away, store in an airtight container in the refrigerator for up to 1 week.
