3cooker cups long-grain white rice water (to the 3-cup white rice markingin cooking pot) ¼cup extra virgin olive oil ½cup thinly sliced fresh basil (chiffonade) 4cups halved grape tomatoes 1pound fresh mozzarella, cubed (about 3 cups cubed) ¾teaspoon sea salt ½teaspoon freshly ground black pepper

Instructions

Put the rice and water in the cooking pot of the Cuisinart® Rice Plus™ Multi-Cooker. Select the Hard Rice function and press Start. Once the audible tone has sounded to indicate the end of cooking, open the lid and add the remaining ingredients; toss to combine. Adjust seasonings to taste. This dish can be enjoyed warm, cold or at room temperature.
