Ingredients

  • 4large egg yolks
  • ¾teaspoon kosher salt
  • ½teaspoon dijon mustard
  • 1teaspoon fresh lemon juice
  • 1teaspoon water
  • ¾cup vegetable oil

Preparation

  1. 1. Insert the chopping blade into the work bowl of the
  2. food processor. Process the egg yolks, salt, mustard,
  3. lemon juice and water on Low until smooth, about 30
  4. seconds. With the machine running on Low, slowly
  5. add the oil through the drizzle hole in the pusher
  6. until all oil is incorporated and the mayonnaise is
  7. emulsifi ed and homogenous.
  8. 2. Scrape down sides; taste and adjust seasoning
  9. accordingly.
  10. Note: For fresh herb mayonnaise: Process 1⁄3 cup
  11. fi rmly packed fresh herbs (e.g., parsley, dill, tarragon,
  12. basil, etc.), stems removed, with the yolks before adding
  13. the oil.
  14. For a bolder-fl avored mayonnaise, increase the salt by
  15. ¼ teaspoon, the Dijon mustard by ½ teaspoon and
  16. lemon juice to 1 tablespoon.
