Celebration Mug Cake

Need a quick way to celebrate a birthday — or even a half-birthday?This cake-for-one goes from counter to oven to table in minutes. Top with whipped cream or ice cream for a decadent touch.

Ingredients

       Nonstick cooking spray
¼    cup unbleached all-purpose flour
3    tablespoons granulated sugar
½   teaspoon baking powder
      Pinch fine sea salt
3    tablespoons whole milk (or any alternative milk)
1    tablespoon vegetable oil
½   teaspoon pure vanilla extract
1    tablespoon brightly colored rainbow sprinkles

Instructions

1. Lightly coat the interior of a microwave-safe coffee mug (at least 10
ounces in capacity) with the nonstick cooking spray. Using a paper
towel, blot away any excess oil.
2. Put the flour, sugar, baking powder, and salt into the mug. Using a fork,
stir well to combine. Add the remaining ingredients and stir until wellmixed without any dry clumps.
3. Put into the oven, select Microwave and set the time for 1 minute 20
seconds and the power level to High (10P). Press Start. Let sit in the
oven for a minute before removing.
4. Allow to cool slightly before serving and enjoying.
