Ingredients

24 ounces baby potatoes2 tablespoons extra virgin olive oil¼ cup fresh parsley leaves, finely chopped¼ cup fresh mint, finely chopped2 green onions, thinly sliced1 garlic clove, smashed1 teaspoon kosher salt¼ teaspoon freshly ground black pepper

Preparation

1. Put the potatoes onto the tray inside the steamer. Secure lid.2. Select Vegetables and set timer for 25 minutes. Once timer expires, test one potato for doneness with the tip of a knife. Should they need more time, select Manual and press Start. Check potatoes in 5-minute increments for doneness.3. Once cooked through, put potatoes into a mixing bowl and toss with the remaining ingredients.4. Taste and adjust seasoning as desired before serving.
