A classic accompaniment to summer rolls, this sauce can also be used with noodles or chicken.

Ingredients

2cups coconut milk½cup reduced-sodium soy sauce¼cup sesame oil¼cup rice vinegar2tablespoons fish sauce3small to medium jalapeños, seeded and cut into 1-inch pieces3garlic cloves8½-inch pieces of peeled, fresh ginger (about 1 ounce)4cups roasted peanuts½cup packed light or dark brown sugar¼cup red chile paste

Preparation

Put all of the ingredients, in the order listed, into the jar of your Cuisinart® PowerEdge® 1000 Watt Blender. Auto Pulse on High for about 10 seconds and then run on High for 1 minute, or until completely smooth. Remove and serve.
