A classic accompaniment to summer rolls, this sauce can also be used with noodles or on chicken.

Ingredients

½cup unsalted peanuts, toasted¼cup cream of coconut1garlic clove½teaspoon red chili paste¼teaspoon fish sauce1tablespoon soy sauce½teaspoon hoisin sauce½tablespoon fresh lime juice½cup water

Preparation

Place the peanuts in the bowl of the Cuisinart Spice Grinder. Process until finely ground, about 10 seconds.Place the remaining ingredients in a medium saucepan set over medium low heat; whisk to combine. Stir in the ground peanuts. Bring mixture to a simmer; let cook until sauce has thickened, about 20 to 30 minutes. Serve at room temperature.
