Avocado Toast

Ingredients

  • 4 slices (½¾-inch thick) rustic bread
  • 1 medium to large ripe avocado, pitted
  • ½ teaspoon fresh lemon juice
  • ¼ to ½ teaspoon sea salt (to taste)
  • Pinch freshly ground black pepper
  • ¼ cup grape tomatoes, quartered (optional)
  • 2 teaspoons raw pepitas (hulled pumpkin seeds)
  • ¼ teaspoon chili flakes or paprika

Preparation

  1. Toast the sliced bread in the Cuisinart Toaster Oven, preferably to a medium-light doneness.
  2. While bread is toasting, prepare the avocado topping. Combine the avocado, lemon juice, salt, and pepper in a small bowl. Mash with a fork to desired consistency.
  3. Once bread is toasted, divide the mashed avocado on top of each slice. Top with the tomatoes, if using, pepitas and chili flakes or paprika.
