Cacio e Pepe Popcorn

Makes about 16 cups

There’s nothing a little (or a lot of) cacio e pepe literally cheese and pepper can’t make infinitely better.

Ingredients

  • 5 tablespoons unsalted butter, melted
  • 3 teaspoons freshly ground black pepper, divided
  • pinch kosher salt, plus more to taste
  • 16 cups popped popcorn
  • ¾ cup finely grated Romano cheese

Preparation

  1. In a small mixing bowl, stir together the butter,1 teaspoon of the pepper, and the pinch of salt.
  2. In a large mixing bowl, toss the popcorn with the butter mixture and then the cheese until fully coated.
  3. Season with remaining pepper and salt to taste.
  4. Serve immediately.
