Ingredients

3cooker cups long-grain white ricewater (to the 3-cup white rice markingin cooking pot)¼cup extra virgin olive oil½cup thinly sliced fresh basil (chiffonade)4cups halved grape tomatoes1pound fresh mozzarella, cubed (about 3 cups cubed)¾teaspoon sea salt½teaspoon freshly ground black pepper

Preparation

Put the rice and water in the cooking pot of the Cuisinart® Rice Plus™ Multi-Cooker. Select the Hard Rice function and press Start. Once the audible tone has sounded to indicate the end of cooking, open the lid and add the remaining ingredients; toss to combine. Adjust seasonings to taste. This dish can be enjoyed warm, cold or at room temperature.
