This is the perfect base for any rice bowl. Top with protein and crunchy vegetables and seasonings.

Ingredients

  • 1strip kombu*
  • ¾cup water
  • 1½cups short grain brown rice
  • 2garlic cloves, smashed and roughly chopped
  • 1½-inch piece fresh ginger, peeled and sliced
  • 3cups chopped kale (any variety)

Preparation

  1. Put the kombu and water into a small bowl or a measuring cup and allow to sit at room temperature overnight.
  2. Put the soaked kombu and water along with the rice, garlic
    and ginger into the glass cooking pot. Secure lid.
  3. Select Grains, set timer for 45 minutes and press Start. After 40 minutes, press Pause and add the chopped kale. Secure lid, press Pause and allow to finish cooking.
  4. When timer expires, carefully remove the kombu. Once cool to
    the touch, chop and add back to the rice mixture. Stir to combine and serve.

    Kombu is a dried kelp and can be found in the Asian section of most grocery stores. It adds a flavorful saltiness to the rice.
