Ingredients

1cooker cup bulgur wheat1cup water4cups fresh parsley, chopped½cup fresh mint, chopped4cups halved grape or cherry tomatoes8scallions, chopped¼cup extra virgin olive oil½cup fresh lemon juice¼teaspoon sea salt¼teaspoon freshly ground black pepperpinch ground cumin

Preparation

Put the bulgur and water in the cooking pot of the Cuisinart® Rice Plus™ Multi-Cooker. Select the Brown Rice function and press Start. Once the audible tone has sounded to indicate the end of cooking, open the lid and add the remaining ingredients; toss to combine. Adjust seasonings and serve immediately.
