Ingredients

  • 1 cooker cup bulgur wheat
  • 1 cup water4cups fresh parsley, chopped
  • ½ cup fresh mint, chopped
  • 4 cups halved grape or cherry tomatoes
  • 8 scallions, chopped
  • ¼ cup extra virgin olive oil
  • ½ cup fresh lemon juice
  • ¼ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • Pinch ground cumin

Preparation

  1. Put the bulgur and water in the cooking pot of the Cuisinart® Rice Plus™ Multi-Cooker. Select the Brown Rice function and press Start.
  2. Once the audible tone has sounded to indicate the end of cooking, open the lid and add the remaining ingredients; toss to combine.
  3. Adjust seasonings and serve immediately.
