Ingredients

2cups baby bok choy, cut into quarters1cup red bell pepper, cut into strips (about 1 medium red bell pepper)¼cup chopped scallion1cup eggplant, cut into 1” cubes (about ½ small eggplant)1cup carrots, cut into ¼ ” coins1cup shitake mushrooms, sliced1cup broccoli florets2garlic cloves, sliced2tablespoons soy sauce2tablespoons chicken stock½teaspoon crushed red pepper½teaspoon freshly ground black pepper

Preparation

Place all vegetables into a microwave safe casserole dish. Add the remaining ingredients and toss all together. Cover and microwave in the Cuisinart® Convection Microwave Oven with Grill on high power (PL 10) for 12 minutes.
