Ingredients

2cooker cups quinoa 2¼cups water1mango, peeled, pitted and cubed1apple, peeled, cored and diced1pear, peeled, cored and diced1orange, peeled and sliced, bitter white pith removed¾cup toasted and chopped pecans1½tablespoons fresh mint, chopped1tablespoon pure maple syrup2teaspoons ground cinnamon

Preparation

Put the quinoa and water in the cooking pot of the Cuisinart® Rice Plus™ Multi-Cooker. Select the Brown Rice function and press Start. Once the audible tone has sounded to indicate the end of cooking, turn the unit off and open the lid. Transfer the quinoa to a baking sheet to cool. Once the quinoa is cool, transfer to a medium-large mixing bowl. Add the remaining ingredients; toss to combine. Adjust seasonings and serve.
