Grilled Marinated Sirloin Tips
If your butcher doesn't have sirloin tips in the case, ask them to cut sirloin flap meat into 2-inch thick strips. This steak cut grills up well and has a deep, rich umami flavor. A true tailgate winner.
Ingredients
- 1/4 cup balsamic vinegar
- 2 cloves garlic, finely chopped
- 1 teaspoon Dijon mustard
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1 cup extra-virgin olive oil
- 1 cup water
- 1 pound sirloin tip steaks
Preparation
- Using an immersion blended or small blender; pulse balsamic vinegar, garlic, mustard, salt, and pepper together until combined
- With blender on low, slowly drizzle oil into balsamic mixture, adding water as needed if vinaigrette is too thick
- In a non-reactive pan, add steak tips and cover with balsamic vinaigrette, turning to coat all sides
- Marinate in refrigerator overnight or for at least 3 hours
- Preheat grill on high for 5 minutes
- Lower grill to medium heat
- Shake off excess marinade and place steak tips on grill searing each side for approximately 5 minutes until the internal temperature reaches 155ºF
- Serve immediately with favorite sides
